It’s all about the sauce!
A sunny Sunday afternoon at The Witch Hotel – the perfect setting for a laid-back lunch.
But what truly made the experience unforgettable? The sauces. These weren’t just condiments; they were game changers.
The steak burger is far from ordinary.
A generous 120g of rib fillet steak, topped with fried onion, cheese, mixed lettuce, tomato, and beetroot, all served on Turkish bread. But the real magic? That sauce.
Curious, I asked co-owner and chef Brok Jackson what was in it.
His quick response? “Wouldn’t you love to know?”
When I half-jokingly requested a bottle to take home, he simply smiled and said, “You’re not the first person – or the fifth – to ask.”
Each bite triggered a flavour memory, reminding me of something familiar yet entirely unique. It wasn’t just another steak burger; it was an experience.
Then came my wife’s southern fried chicken burger. Having played professional sports in the US, she’s no stranger to authentic Southern cooking.
Yet, this burger left her speechless – and very happy with her choice.
Crispy buttermilk chicken, fresh lettuce, slaw, and pickles on a toasted bun.
Once again, the sauce stole the show, striking that perfect balance between bold and smooth.
Every detail, down to the house-made chicken patties, reflects Chef Jackson’s passion for his craft. And it shows across the menu.
Head to 254 Brisbane St, West Ipswich, and taste why this place is a local gem.
The Witch Hotel is open Tuesday (noon-6pm), Wednesday to Saturday (11am-late), and Sunday (noon-4pm).
